Venison Meatloaf w/Bacon

2 pounds ground venison
2 TBPS Cracker Girl
1/2 cup Cracker Boy Dipping Sauce
1/2 cup panko bread crumbs
2 eggs slightly beaten
6 – 8 slices hickory smoked or applewood bacon

In a large mixing bowl, mix all ingredients except bacon. The shape of the meatloaf is totally up to you…it can be loaf shaped or just flattened into an 8 x 10 casserole dish. Using kitchen shears, cut the bacon into small pieces and cover the meatloaf with the uncooked bacon. Cook uncovered at 350 degrees for 40 minutes.

Meatloaf Sauce
1 cup ketchup
2 TBPS Worcestershire Sauce
2 TBPS white vinegar
1/2 tsp onion salt
1/4 tsp garlic powder
1 TBPS white sugar

Mix all ingredients until well combined. We like sauce…so I usually double this recipe for a 2 pound meatloaf. After the meatloaf has cooked uncovered for 40 minutes, remove from oven, add sauce, return uncovered for another 10 minutes. Allow to rest for a few minutes and enjoy!
