NANAIMO BARS
– Brought to you straight from Mrs. Sherri’s Kitchen. If you didn’t find them at the Tractor Show you missed out on a special treat! They taste best if you can wait a couple of hours for them to harden… key word “if.” Eat ’em up!
2 packets graham crackers
1 cup butter
2 Tablespoons cocoa
1 cup shredded coconut
1 egg
1 1/2 cups powdered sugar
2 Tbsp French vanilla pudding mix
2 squares unsweetened chocolate
1st Layer:
- Crush 2 packets graham crackers. combine with 1/2 cup melted butter, 2 tablespoons cocoa, and 1 cup of shredded coconut, and 1 egg.
- Combine all and press into oblong pan with edges. I usually lay down wax paper, and roll it out.

Let this cool 15-30 minutes.
2nd Layer:

Melt 1/3 cup butter, add to it the 1 1/2 cups powdered sugar, 2 Tbsp French vanilla pudding mix..

Mix this together until creamy. Spread over 1st Layer and let cool 15-30 minutes.
3rd (and last) Layer:
- Melt 2 squares unsweetened chocolate (in a double boiler) and add 2 Tbsp butter.

Spread this over layer 2. It will be a very thin layer.
