1 stick butter melted 1/2 cup extra virgin olive oil 1/3 cup finely chopped chives Kosher salt and freshly ground black pepper 6 medium russet potatoes, scrubbed Preheat oven to 450 degrees. Stir together the butter, olive oil, chives and some salt and pepper in a small bowl. Place a potato between the handles of 2 wooden spoons or 2 chopsticks. 1 cup grated mozzarella 1 9-inch prebaked deep dish pie shell 1/2 cup chopped green onion 10 fresh basil leaves, chopped 4 tomatoes, peeled and sliced (or enough to fill pie completely) 1 cup grated Cheddar 1 cup mayonnaise (light mayonnaise works just as great!) Preheat oven to 350 degrees. Place the tomatoes in a single layer on paper towels, sprinkle with salt and allow to drain.
